Bless you Hans-Jesper, so many times I’ve thought of you since we met in the early 1990s, and our visits with you in Copenhagen twice. You introduced me to the city and DTU, arranged for a number of students to come conduct research projects in the USA at Clemson University, and your own visit here staying at our home. For the past year, I tried several times to contact you but we never connected, then I learned of your passing away via one of those former students who is also our friend. I was fortunate to meet your father, your mother, and your sister who took us all one day to a fabulous restaurant in the northern area of Denmark. You took me to your country house one visit, which I do not remember the name, as I think your father is buried there…I’d like to visit that place again one day. I had a really great time with you every visit, including at the International Congress of Meat Science and Technology in France (where we initially met), Germany, Krakow, Poland, and Rome, Italy.
